Marinating chicken is the best way to guarantee lots of flavor and juicy meat. Broiling the chicken thighs guarantees them to be crispy and very tasty. –

Ingredients:

– bone in, skin on chicken thighs – olive oil – salt, pepper – lemon – garlic (cloves or dried ground) – fresh herbs - sage, parsley, thyme (or dried equivalents)

 Combine all ground seasonings and rub into the skin of chicken thighs.

Heat 1 tablespoon butter in a Dutch oven over medium heat.* Place seasoned chicken in pot and lightly brown both sides of chicken thighs.  Remove to a platter.

Melt the remaining tablespoon of butter and cook vegetables for a few minutes until lightly browned

Return chicken to pot, place fresh herbs in pot and pour chicken stock over chicken. Cover pot and place in a preheated 400°F oven and cook for 20 minutes.  Remove lid and cook another 10 minutes. Test with a meat thermometer.  They are done when it registers 165°F.
