zesty        MARINATED        asparagus

– This zesty marinated asparagus is a very flavorful side dish to serve year round. You can cook on the stovetop, roast it in the oven, or grill it on the outdoor grill.

I   INGREDIENTS

–olive oil –  lemon juice – rice wine vinegar –  sherry vinegar –  garlic powder, onion powder – salt, pepper – red pepper –  asparagus, washed, trimmed 

Instructions

Trim asparagus by bending each spear and snapping off the bottom.  Place asparagus and marinade in plastic bag. Refrigerator for at least 3o minutes, up to 3 hours.

 Drain marinade.  Heat the grills to medium high heat.  Grill for 5 minutes, turn, and grill another 5 minutes or until they are fork tender.

HOW TO ROAST ASPARAGUS

– To roast the asparagus, preheat oven to 400° and lightly spray a baking sheet. Spread out asparagus and roast until tender.

cooking tips

– Store the asparagus in a jar or large mug with some water in it.   If you are using an outdoor grill and the asparagus are on the thinner side, place them horizontally across the grates so they don't fall through.
