Asparagus and Ham Quiche

Description

 

This delicious Asparagus and Ham Quiche is so versatile, you can serve it for brunch, lunch, or a light supper. It's a high protein, easy meal and this egg dish is adaptable to using some of your favorite ingredients.


Ingredients

  • 1 9 inch pie crust (homemade or pre-made) *
  • 4 large eggs
  • 1/2 cup half and half
  • 1/2 pound cooked ham, chopped
  • 1/2 pound asparagus, chopped into 1/2 inch pieces
  • 3/4 cup cheese (Havarti) *
  • 1/4 cup cherry tomatoes, chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon garlic and onion powder
  • 1/2 teaspoon paprika

Instructions

  1. Make your pie crust or follow the instructions for a pre-made one.
  2. Preheat oven to 400°F.
  3. In a large bowl, beat eggs to combine, stir in the half and half, ham, asparagus, tomatoes, cheese and seasonings.
  4. Pour mixture into pie crust.  Bake for 10 minutes.  Lower oven temperature to 350°F.
  5. Continue baking for another 30-40 minutes.
  6. The quiche is done when a sharp knife is inserted about 1 inch from the edge comes out clean.
  7. The center may still be very lightly jiggly.
  8. Cool at least 20 minutes at room temperature before serving.  Or you can cover the quiche and store in the refrigerator.

Notes

*Use full fat dairy for the richest, creamiest taste and texture. You can use milk instead of heavy cream or half and half but don't use non-dairy milk or low fat milk.

*If you'd like, choose another semi-soft cheese such as Monterey Jack, Gouda or Swiss.

*Make sure the asparagus and tomatoes are chopped in similar sizes to allow for even cooking.*

*Store leftover quiche covered with food safe plastic wrap in the refrigerator for up to 3 days.  You can serve cold or reheat 1-2 minutes in microwave. Or Reheat in 350°F oven for 5-10 minutes or until hot. To freeze, wrap in plastic and aluminum foil,  store in freezer for up to 2 months.
