Tender strips of pork, colorful peppers and onions are combined with a zesty, spicy marinade. These pork fajitas can be on your dinner table in just about 30 minutes. This recipe is also low carb and keto friendly with a few easy substitutions.
What makes this recipe just so good.....
- These fajitas can be as mild or as spicy as you'd like. Add more or less chili powder and red pepper flakes and you will easily up the heat.
- With just a little bit of time slicing the meat and vegetables, this recipe comes together so quickly. If you skip the marinating time and just season the pork, dinner can be on the table in just about 30 minutes.
- This recipe can also be great for meal prep. You can slice up all your veggies ahead of time and store in the refrigerator for a few days until ready to cook. Naturefresh has great information about storing fresh vegetables.
- To keep this meal low carb and keto, serve the meat and vegetables over cauliflower rice or cauliflower mashed potatoes.
Ingredient Notes for Pork Fajitas
- This recipe uses lean strips of boneless center cut pork. Fajitas are usually made from skirt or flank steak like my Instant Pot Steak Fajitas, but any meat can be used. Feel free to substitute sliced steak or chicken, they all pair really well with peppers and onions.
- The combination of seasonings for the pork are fairly spicy but you can tone it down or increase it as you'd like. Just add more red pepper flakes and some cumin for added smokey heat. If you'd like less, don't add the red pepper flakes, decrease the chili powder and add more garlic and onion or your favorite all purpose beef or chicken flavored spice mix.
Step by Step Directions
- Slice the pork into thin strips.
- Combine the lime and oil and pour over pork. Mix the seasonings and spices together and press into the meat. Cover and let marinate in the refrigerator for 30 minutes.
- Slice peppers and onions.
- Heat oil in large cast iron skillet or large fry pan.
- Cook vegetables for about 5 minutes or until vegetables are softened and lightly caramelized but still hold their shape and are not too soggy.
- Remove vegetables from pan
- Add more oil and place slice pork in skillet and let cook 2 minutes before you turn the meat. Cook another 2 minutes.
- Add vegetables back into skillet and stir to heat through.
- Serve on tortillas with choice of toppings.

Ingredients
Marinade
- 2 tablespoons lime juice
- 2 tablespoons olive oil
- 1 teaspoon onion powder
- 2 teaspoons chili powder
- 2 teaspoons smoked paprika
- 1 tablespoon brown sugar (or brown sugar substitute)*
- 1 teaspoon garlic powder
- 1 teaspoon salt
- ½ teaspoon red pepper flakes
Pork and Vegetables
- 2 pounds ½ inch thick boneless center cut pork chops, cut into 2-3 inch long strips
- 1 green bell pepper, sliced into 2-3 inch long thin strips
- 1 red bell pepper, sliced into 2-3 inch strips
- 1 yellow bell pepper, sliced into 2-3 inch strips
- 1 large red onion, sliced into 2 inch strips
- 1 tablespoon olive oil
- 2 tablespoons lime juice
Instructions
- Combine 2 tablespoons lime juice and olive oil in a large bowl
- Place pork strips in the liquid and stir to coat.
- Combine all seasoning and spices together and pour over pork and press the spice rub into the meat.
- Cover bowl and let marinate in refrigerator for at least 30 minutes.*
- In a large cast iron skillet or grill pan, heat oil over medium flame.
- Saute' the peppers and onions for about 5-6 minutes, or until the vegetables are softened and browned. Remove from skillet.
- Lightly brush the skillet with a tablespoon of oil, making sure the flame is medium high heat.
- Place pork strips in pan and let them cook for about 2 minutes, then turn them over and cook another 2 minutes on the other side.
- Serve with the vegetables on a warm fajita tortilla with your choice of toppings.**
Notes
*If you are in a hurry, skip or shorten the time spent marinating the pork. If you decide to skip it and just use the seasoning, just squeeze a little lime over the meat before you season and cook it. The acid in the lime juice help break down the meat and make it more tender.
*You can marinate the pork longer than 30 minutes, even overnight if you want. Just leave out the lime juice until the last 30 minutes before cooking. That is really all the time you need to soften the pork.
**To keep this recipe low carb, I used Brown sugar Swerve. You can use regular brown sugar.
***I also used Mission Carb Balance Tortillas. They have 3 grams net carbs. But you can certainly use your favorite tortilla. They are also very good lightly heated in a pan. Don't cook more than a minute or so. They might come out very crisp and crumble apart.
***Another low carb choice is to eat the pork and vegetables in a lettuce wrap or on top of cauliflower rice.
