Applesauce Spice Quick Bread

Dec 6, 2019 · Leave a Comment

This recipe for applesauce spice quick bread is a perfect example of me not being able to leave well enough alone. And in this case, I honestly feel it deserved a new title for the new and improved recipe.

This was taken from an old ripped out copy of a recipe from a 2003 Redbook Magazine. (YES, 2003, I am a recovering recipe hoarder). I changed and added ingredients until it was good enough to be added to my yearly Christmas Baking Extravaganza!

Simple ingredients but a very delicious quick bread!

  • Butter
  • Sour cream
  • Unsweetened applesauce
  • Dark brown sugar ( I have used light brown)
  • Eggs
  • The basics – flour, baking soda, salt
  • The must haves-cinnamon, cloves, ginger, nutmeg
  • Raisens ( perfectly fine without)
  • Confectioner’s sugar- just for pretty

Description

A delicious applesauce quick bread with brown sugar and aromatic spices.

Ingredients

Scale

1/2 cup unsalted butter, softened

1 cup light or dark brown sugar

2 large eggs, room temperature

1/2 cup sour cream

1/2 cup applesauce

1 tablespoon vanilla

1 cup all purpose flour

1/4 teaspoon salt

1/2 cup raisins

1/2 teaspoon baking soda

2 teaspoons cinnamon

1 teaspoon ginger

1/2 teaspoon cloves

1/2 teaspoon nutmeg

Instructions

Preheat oven to 325°.

Whisk the flour, baking soda, raisins  and spices together in a bowl.  Set aside.

Beat the butter and sugar together until fully mixed.  Beat in the sour cream, applesauce, vanilla and eggs.

Add in the dry ingredients and mix until fully combined but don’t over mix.

Pour into 9 x 5 loaf pan greased with baking spray.

Bake for 45 – 50 minutes until toothpick tested in center comes out clean.

Notes

I have baked and frozen this bread every year at Christmas and it always defrosts beautifully.  I feel it is one of those types of baked goods that gets better a day or so after you’ve made it.
