Recipe Ingredients
You will need the following ingredients to make Baked Italian Sausages:
- Chicken stock
- tomato paste
- salt, pepper, garlic powder, Italian seasoning
- fresh herbs
- carrots
- cherry tomatoes
- red onion
- bell peppers
- Italian sausages
Ingredient Notes
Sausages: For this recipe, I am using mild sweet Italian sausages. However, there are other types of sausages that would work as well. You can use hot Italian sausage, Andouille, Bratwurst or Chorizo sausages.
Vegetables: Some other vegetables you could include for this recipe might be potatoes, celery, broccoli, string beans, zucchini, eggplant or cauliflower.
How to make Oven Baked Italian Sausages?
Chop the vegetables into similar sizes. Pour them and the sausages into large glass bowl.
Stir together the chicken broth, olive oil, tomato paste, chopped herbs, seasonings, garlic, salt, pepper. Pour the sauce over the sausages and vegetables and mix well.
Let everything sit and marinate for about 15 minutes while the oven is heating to 400°F.
Remove the sausage and vegetables from marinade and spread evenly onto a baking tray in a single layer that has been lined with parchment paper or aluminum foil.
Drizzle some of the sauce over everything. Add some optional fresh herbs to the pan.
Bake for 40 minutes. Test the sausages with an internal meat thermometer. They are done at 165°F. Put back in the oven if they are not quite done.
Recipe Tips
- In general, a darker baking tray will brown the vegetables quicker and more evenly. However, I do use a lighter pan often and they turn out great. I believe it is more important to space out the vegetables and they are not on top of each other so that the heat circulates throughout the pan.
- If you don't have parchment, you can use a Silpat liner or spray the baking sheet with nonstick baking spray.
- There is no need to pierce the sausages. They will cook perfectly as is and will not lose any juices.
Storage and Reheating
Any leftovers should be stored in an airtight container in the refrigerator for 3 days. You can reheat them in the microwave, saute' in a frying pan or on a baking tray in the oven. Add a little bit of chicken stock mixed with tomato sauce if you want some sauce drizzled over them.
You can also freeze the sausage and vegetables for 3-4 months in a freezer safe container. Defrost in the refrigerator overnight and reheat as suggested above.
FAQ
It is important not to overcrowd the baking sheet. If you double the recipe or use more vegetables that in the original recipe, you will probably want to use two large baking trays.
Also, you can turn the oven to broil for the last 1-2 minutes and everything will brown nicely. Just watch them carefully. I find the broiler works faster after the oven has been on for a while and the food can burn if broiled too long.
This is a very hearty meal as is. But you can add buttered noodles or crusty bread on the side.
For lower carb, lighter side dish choices, Butter Lettuce salad or House Salad.

Notes
*Instead of Italian sausages, you can use Andouille, Bratwurst, chicken sausage or other favorite raw sausage. If you use a precooked sausage, they will be done before the vegetables and may dry out.
* Try to chop the vegetables into similar size to allow even cooking.
*If you don't have fresh herbs, just use an extra teaspoon seasonings
