- There is so much flavor in this meatloaf! It's filled with lots of seasonings, some cheese for added texture and flavor and just a bit of sweet chili sauce to add some interest. And also topped with a sweet oniony glaze.
- You can prep it ahead of time. Put it together in the morning and cook for dinner that night. Or it's terrific meal prep. Using fresh ground beef, make the meatloaf and wrap with plastic wrap and put in a zipper bag or wrap again with aluminum foil. Freeze until ready to use. Just defrost overnight in refrigerator and bake as directed.

Recipe Ingredients
- Recipe ingredients needed are:
- almond flour
- golden flaxseed meal
- sugar free sweet chili sauce
- Worcestershire sauce
- eggs
- Monterey Jack cheese (or use any type of your favorite variety)
- salt, pepper, garlic powder, Italian and Umami seasoning,
- chopped onion
- chopped parsley
This keto meatloaf is made with ground chuck, which is 80 % fat and 20 % lean. Its higher fat percentage is perfect for keto diets.
Recipe Notes & Substitutions
We are using almond flour instead of breadcrumbs because this is a low carb, keto recipe. I added a little flaxseed meal as an additional binder for the meatloaf. If you don't have any, just add the same amount of extra almond flour.
I've been adding this Trader Joes' Umami seasoning for lots of my recipes lately. It is like a general, all purpose seasoning, but so much more complex and savory. Highly recommend!
Also if you can't get sugar free sweet chili sauce, you can use regular chili sauce and a few teaspoons of sugar substitute.
How to cook meatloaf at 375°
Through experimentation, I have found cooking the meatloaf at 375°F is the perfect temperature. The beef is fully cooked but not overly done or dried out.
Preheat the oven to 375°F. Lightly spray a casserole dish or pan with nonstick baking spray. Heat oil in pan and saute' onions until golden brown.
Combine wet ingredients in a large bowl. Add the rest ingredients in the bowl and stir well.
Add in the ground beef and gently mix to combine.
Make the glaze topping
Stir together the ketchup, brown sugar substitute and dried onion flakes or powder.
Form the meatloaf into an oval/rectangle shape. Spread glaze over the top.
Bake in the oven for 45 - 55 minutes or until a meat thermometer registers 160°F.
Let the meatloaf rest for 5-10 minutes before slicing to serve.
Cooking Tips
- Ground chuck, which has 80 % fat, will make the meat juicier than ground round or ground sirloin.
- To avoid a heavy, dense texture, try to handle the meatloaf lightly and don't over mix. I would quickly mix the eggs, chili sauce and Worcestershire sauce together with the cheese separately from the dry ingredients. Then combine together and mix into the ground beef.
- I recommend placing the meatloaf in a casserole dish or pan instead of a loaf pan. This will help distribute the fat from the beef better than a loaf pan because of the size difference.
FAQ
I don't cover my meatloaves and have never felt they weren't juicy enough and delicious. The eggs, chili sauce and ketchup is enough to keep it moist. But ovens do vary so if you find your meatloaf is getting too browned, cover lightly with foil. I would suggest uncovering the last 15 minutes so the glaze browns a bit.
I recommend placing the meatloaf in a casserole dish or pan instead of a loaf pan. This will help distribute the fat from the beef better than a smaller, deep loaf pan because of the size difference. You can also drain the fat halfway through cooking if you prefer.
Storage & Reheating
- In my opinion, leftover meatloaf makes the best sandwich. Truthfully, sometimes I like it better than cooked fresh as a hot meal. Ssshhh. And....I like them with mayonnaise and ketchup. I know...
- But of course you can reheat the meatloaf in the microwave for a few minutes. Or heat in a fry pan or oven for 5-10 minutes until heated through. In this case, for leftovers, cover the meatloaf to keep from drying out.
- You can wrap leftovers or store in an airtight container to freeze for 3 months. Defrost overnight in the refrigerator.
Serving Ideas
Healthy, low carb vegetables are great side dishes that go along with keto meatloaf. To save time and energy, make something that can go in the oven while the meatloaf is cooking. Roasted Asparagus, Roasted Squash and Zucchini or Roasted Glazed Carrots will all be delicious with this meal! Mashed cauliflower is great too.
For this meal, I just made some quick sautéed carrots and string beans. If I'm trying to save time, I will make some microwaved vegetables, then saute' them quickly in a fry pan with a bit of olive oil and some spices for extra flavor.

- 1 tablespoon olive oil
- 1 small yellow onion, minced
- 2 pounds ground round or ground chuck beef
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon Worcestershire sauce
- ¼ cup sugar free chili sauce
- 2 tablespoons sugar free ketchup
- 2 eggs
- ¼ cup almond flour
- 2 tablespoons golden flaxseed meal *
- ½ cup shredded cheese (Monterey Jack)
- 2 tablespoons minced parsley
- 1 teaspoon Umami seasoning, optional
Glaze
- ¼ cup sugar free ketchup
- 2 tablespoons sugar free brown sugar (Swerve)
- 1 tablespoon dried minced onion or ½ teaspoon onion powder
Instructions
- Preheat oven to 375°. Lightly spray a pan or casserole dish with non stick cooking spray.
- Heat the oil in a fry pan and saute' the chopped onion for 3 minutes until lightly caramelized.
- In a large bowl, whisk the eggs, Worcestershire sauce, ketchup and chili sauce. Add the remaining ingredients and mix well.
- Add the ground beef and gently mix by hand or a wooden spoon to combine. Don't over mix.
- Place the mix in the dish or pan and shape into an oval or rectangle.
- Stir the ketchup, brown sugar substitute and onion flakes in a small bowl. Spoon over the meatloaf and spread all over the top.
- Bake in the oven for 45-55 minutes. Test at 45 minutes with a meat thermometer inserted in the center.
- The meatloaf is done when it registers at least 160°F.
- Remove from oven and let it rest for 5-10 minutes before slicing.
Notes
* If you prefer, you can drain the fat from the casserole dish halfway through the cooking time.
*Instead of shredded cheese, you can add about ¼ cup of parmesan cheese.
*I usually recommend a metal pan for meatloaf. But you can use glass, Pyrex or Corning Ware. Just realize that it might take a few minutes longer to bake since metal cooks foods a bit slower.
