    Slow Cooker Beef Chili

    There are some recipes that seem meant to cook long and slow. That is the way I have always made my slow cooker beef chili. Cooking it long and slow melds the flavors together and breaks down the beans a bit for a nice thick chili.

    What ingredients are used in beef chili?

    I always make my beef chili with three different types of beans. We feel it really makes the chili have fantastic flavor and texture. The ingredients in this recipe are:

    • Pink or pinto beans
    • Light red kidney beans
    • Dark red kidney beans
    • Ground beef
    • Crushed tomatoes
    • Diced tomatoes
    • Chopped yellow onion
    • Minced garlic
    • Chipotle peppers in adobo sauce
    • Chili powder
    • Crushed red pepper, salt

    You can adapt my slow cooker beef chili in many ways. For example, you can make it vegetarian or add sausage instead of or in addition to the ground beef. This recipe uses canned chipotle peppers which are pretty spicy. However, if you leave out the seeds, it will be milder.

    The slow cooker beef chili recipe makes a ton of food. My husband loves to eat it for lunch and it also freezes well, handy for a quick dinner.

    What are some favorite ways to top chili?

    • Chopped jalapeños
    • Minced green or yellow onion
    • Sour cream
    • Bacon
    • Shredded cheddar cheese
    • Guacamole
    • Shredded lettuce
    • Chopped tomatoes
    • Olives
    • Salsa- mild or spicy
    • Tortilla chips
    • Chili can be served over cooked rice

    Description

    This hearty beef chili is so easy to make in your slow cooker.  The chili will simmer all day and be a delicious dinner with minimal effort.  You choose the level of heat. It is fantastic with milder flavors or with make-your-eyes-water maximum spices.


    Ingredients

    Scale

    3 cans pink or pinto beans, rinsed and drained

    3 cans light red kidney beans, rinsed and drained

    3 cans dark red kidney beans, rinsed and drained

    1 can 28 oz. crushed tomatoes

    1 can 28 oz. diced tomatoes

    1 chopped yellow onion

    1 ½ lbs. ground beef, browned and drained of fat

    2 - 4 chipotle peppers in adobo sauce,  finely chopped ( with or without seeds)

    3 tablespoons adobo sauce

    1 - 2 tablespoons chili powder

    1 - 2 teaspoons crushed red pepper

    1 teaspoon salt


    Instructions

    Add all ingredients to slow cooker.  Cook on low for 8 hours or high for 4 hours.

    Serve with your choice of toppings.
